8 Doors Distillery is one of the newer craft spirits operations on the NC500, established in Wick in 2020 and producing whisky, gin and vodka. The name references the eight doors of a traditional Caithness flagstone cottage โ a nod to local vernacular architecture. The distillery sources barley from local Caithness farms where possible, and its Arable expression specifically highlights the provenance of its grain. In a county better known for Old Pulteney, 8 Doors represents the new wave of craft distilling that is bringing new energy to the Caithness spirits scene. Tours are informal and enthusiastic.
